Editor: This document, made by George Birkhan, is titled "Races, Jews: United States. New Jersey. Woodbine. Baron de Hirsch Agricultural and Industrial School: Woodbine Settlement 1891 - 1904: Exhibit VI: Baron de Hirsch Agricultural and Industrial School. Dairy Department. Milk Testing." It is, in fact, a dairy report. Curator: It feels so…clinical, doesn’t it? Like a glimpse into a very specific, very regulated world of early 20th-century agriculture. I can almost smell the milk and feel the cool tiles of the dairy. Editor: The format itself is striking: the stark table, the precise, handwritten entries, and the scientific terminology create a sense of order and control. Curator: But there's also a story here, right? You can see words such as adulteration. There are hints of fraud, of the struggle to maintain standards, which is deeply human. It sort of transcends the scientific appearance. Editor: I agree. Its semiotic power lies in this tension between objective reporting and the underlying realities of agricultural life, reflecting anxieties about purity and quality. Curator: It’s interesting how something so mundane can open a window into a past we think we know, but really don't. It is quite the window!
